Made In-House, From Scratch

At the heart of our kitchen is Head Chef Tarun Gurung, whose cooking journey spans more than 15 years across some of the world’s most demanding, flavour-driven kitchens — from Dubai to Thailand, India, and the Himalayan regions.

Those years shaped a deep respect for technique, patience, and balance. In our kitchen, everything is made from scratch: spices are layered slowly, sauces are built over time, and flavours are developed with care — never rushed, never outsourced.

Some recipes carry even deeper history. Our signature chip seasoning, for example, has been made using the same carefully selected brands and ingredient ratios for over 20 years. It’s a recipe our community knows well — familiar, distinctive, and intentionally unchanged.

This philosophy defines how we cook for Salt by Cafe One and Ardor — honest food, thoughtfully prepared, whether served in-store or delivered as part of our catering.

Cafe One began in Indooroopilly in 1994 with a focus on consistency, quality, and community. What started as a local café has grown into a family of brands built around the same values.

Today, Salt by Cafe One extends our offering into modern catering and shared dining, while Ardor—our in-house roastery—allows us to control flavour and quality from bean to cup.

We work closely with local suppliers, cook with intention, and keep things simple. Whether it’s a daily coffee or a catered event, our goal is always the same: reliable food, well made.
